After a long day at the office, I needed a little something to perk me up. I wanted to make the cakes that Cat had made, but was short on a few items...mainly an egg. (Blame it on the cornbread I made the other night in my cast iron skillet!) I researched recipes with what I had in my pantry and found a recipe similar on the same website. I did a little switcheroo on a few items to make it my own and WOW!
Preheat your oven to 350 degrees.
In a medium bowl, mix all ingredients together and pour into a small oven safe dish. (I used a 16 oz round Corningware dish.) Bake for around 20-25 minutes, starting to check the dish at 20 minutes.
4 tbs flour
8 tsp sugar
1/2 tsp baking powder
1-1/2 tsp shortening (butter flavored Crisco works WELL!)
4 tbs buttermilk (yep, you guess it...out of milk too!)
1 tsp of orange extract
2 tbs cocoa powder
handful of semi-sweet chocolate morsels
pinch of salt
If the batter is a little too thick, add just a small of water or a little more milk to thin it out...but not too thin!
Enjoy, it's like reliving the Christmas season with the warm, chocolate and orange scents in your kitchen!
