Cayenne Rubbed Chicken with Avocado Salsa

I'm an avid Martha Stewart Living Radio listener. I listen to most of their programs throughout the work day. One particular spot I listen to is Everyday Food with Sandy Gluck. Amazing I tell ya! (Don't miss Whatever Martha with Alexis and Jennifer either....they will have you in stitches!)

Back in the spring their What's for Dinner Tonight? recipe was Cayenne Rubbed Chicken with Avocado Salsa. I have a weak spot for anything spicy, hot or avocados. This recipe has been one of my favorite "go to" meals and was in instant hit with Chase. For a print out you can visit Martha Stewart's website.

Cayenne Rubbed Chicken with Avocado Salsa
Prep: 10 minutes
Total: 30 minutes

Ingredients
Serves 4
Coarse salt and ground pepper
1/4 teaspoon cayenne pepper
4 boneless, skinless chicken breast halves (6 to 8 ounces each)
2 tablespoons olive oil
1 medium red onion, finely diced
2 tablespoons fresh lime juice
1 Hass avocado, pitted and cut into chunks


Directions
-In a small bowl, combine 1 teaspoon salt, 1/4 teaspoon pepper, and cayenne; rub all over chicken.
-In a large skillet, heat oil over medium. Add chicken, and cook until browned on the outside and opaque throughout, 8 to 10 minutes per side.
-Meanwhile, in a medium bowl, combine onion and lime juice; set aside. Just before serving, fold avocado chunks into onion mixture; season with salt and pepper. Serve chicken topped with salsa.

Alice's Notes: I add fresh cilantro and an extra tablespoon of lime juice to give a little more flavor to the salsa!
